Asiago Chicken Penne w/ Roasted Cherry Tomatoes & Spinach

With only a handful of ingredients, this is a quick fix pasta that's packed full of flavor.

Inspired by a meal offered by a Vancouver restaurant we discovered on line when googling ingredients we wanted to use for dinner, we decided to give it a whirl and see how things worked out.  It contains all of our favorites, so we knew it'd be a winner, and it was : )

Start by roasting 1 package of cherry tomatoes in a pre-heated oven set at 450 degrees.  I cut most of them in half only skipping over the smallest of them to let them roast whole.  Since they are so small, it doesn't take long for them to roast.  Drizzle olive oil over them and sprinkle with salt & pepper. Roast  15 minutes maybe, just peek in on them after 10 minutes or so, you want them to just start to wrinkle.

Roasting tomatoes concentrates their flavor and adds an extra dimension to all of your dishes.  You can certainly roast them slowly and for a much longer time period to allow them to darken and flatten out, but I just didn't want to let them go that far.  I only wanted them slightly roasted.

Alaskan Black Cod w Hoison & Ginger Sauces

Cod is a super popular fish.  It has a flaky, firm, white flesh with a mild flavor and when cooked properly, it's moist and delicious.

Creamy Scrambled Eggs on Croissant

Creamy Scrambled Eggs on Croissant

I like 'em creamy and soft, my sweetie likes his curds a little larger, a bit more dry and....with cheddar cheese. Either way, scrambled eggs have to be one of the easiest and fastest eggs I make.

You can't always get what you want

Not to beat up on Quiznos Sub Shop...but there seems to be a bit of a difference between the sandwich and the advertising picture of my sandwich : )  Is that not, quite often, the way it is though...the difference between how they market an item and what they actually sell you?

Just Thinking, Putting thought to paper, so to speak...

I've been thinking lately.  I've been thinking about programs that supposedly measure our influence, the differences between programs like statcounter that track a website's visitors versus the amount of comments left on a writers blog post. I have been considering who we...okay....I, write for.

Clean, Classic & Healthy...Fuhgeddaboudit!

Olive Oil & Garlic Pasta with a Romaine Tomato Salad

Sometimes when it's been a long day and we're exhausted, a simple classic dish is what hits the spot.  Dinner doesn't always have to be complicated or involve lengthy periods of time in the kitchen.  Some of the best dishes we enjoy, are the classic comforting recipes that bring us an enormous amount of pleasure.

There's something to be said for the saying, K.I.S.S.  Keep it simple silly : D

Peanut Butter Marshmallow Squares

This is a very easy to make treat I learned to make only a couple of years ago.  Strangely it is one I had never even heard of before then.  The kids will love it and all peanut butter lovers.  It is a mix of marshmallows and peanut butter that ends up looking like little pastel stained glass windows.
