Thai Green Curry with Tofu

I've spoken of my love for the flavors of Thai green curry in the past.  Our favorite protein with it has always been chicken although shrimp is okay, wanting to try a healthy alternative we decided on tofu this time.  Tofu is famous for its mild flavor & its ability to soak up the flavors you are cooking with, it is tofu's way to shine.

Not having a huge amount of experience with the stuff, I usually find myself staring at the packages in the store never knowing exactly which one to purchase.  I usually choose a firm regular tofu, it's easier to get out of the package, easier to slice and will retain its shape during the cooking process.  Tofu is low in calories, contains high levels of iron, has no saturated fat in it and is a low cholesterol food.  It's a great alternative to red meats and poultry when you're feeling like eating a little healthier.

I sliced my tofu into slices and then into cubes.  Lay cubes flat on a cutting board and cover with paper towel to soak up any water or just pat dry.  There are many ways to cook tofu, but for this recipe I sautéed my cubes in a bit of olive oil, some use coconut oil, I think any healthy type of oil is fine, it just depends on your taste and what's hanging around in the cupboard.

Fry until lightly golden brown on each side, place on a paper towel to drain any excess oil off.

Place tofu into your prepared Thai green curry sauce and allow to simmer for a few minutes to allow the tofu to soak up some of that yummy flavor.

(link is to my original posted recipe)

In a separate pan, heat 1 tablespoon olive oil on medium heat
add 2-3 tablespoons green curry paste and 3-4 minced lime leaves, heat for 3 minutes
Add 2 cans coconut milk and stir to combine
Add 2 tablespoons fish sauce
Add 1/2 teaspoon white sugar
Add sliced carrots
Sauce will thicken slightly after simmering for 10-15 minutes
Add tofu and simmer for 5 minutes to allow tofu to get hot and to soak up the flavors of the sauce
Add 1/2 cup frozen peas and simmer for a few minutes until cooked through and hot
Serve with Basmati Rice

Ciao for now & until next time Happy Cookin'
