Chilean Sea Bass on Roasted Garlic Mascarpone Mashed Potatoes










In a hot pan, add olive oil and allow to heat until very hot but not yet smoking
Place fillets in oil after patting dry
Sear Sea Bass 3-4 minutes until golden brown
Place on a baking dish and place in a preheated 350 degree oven for 6-8 minutes depending on thickness
Don't overcook or the Sea Bass will dry out and it is delicious when still moist


I had a hard time deciding on what type of bed to lie the Sea Bass on as it was my first time cooking it.  I decided on mashed potatoes but sauteed spinach was a runner up : )  There was also a nice red pepper sauce I found on line (Gordon Ramsay) and a friend suggested a coconut cream based sauce.  Whichever you choose, it's the vehicle in which your fish is highlighted so pick something you know you'll enjoy.

Roasted Garlic Mascarpone Mashed Potatoes


Potatoes
Salt
Butter
Milk
Roasted Garlic
Mascarpone cheese
Salt and Pepper
Boil potatoes in well salted water
Warm milk, butter, and roasted garlic in a pan while potatoes cook
Mash potatoes
Combine milk mixture into potatoes
Fold in mascarpone cheese
Season with pepper to taste

Roasted Garlic

Cut off the top of a head of garlic, drizzle olive oil on top of exposed cloves
Season with salt and pepper
Place head of garlic in foil and fold foil into a tent to allow air to circulate
Bake in a preheated 400 degree oven for approx. 45 minutes until golden brown and soft
Squeeze bottom of head of garlic and the cloves will squeeze out
Smash with a fork to puree 





To say the least...I not only love garlic but when roasted??? Heaven!  Try it as a spread on crusty bread, use for garlic bread with chopped fresh parsley or place into any recipe you think you would love to have that flavor shine through.

The Rolling Stones sang "You can't alway's get what you want"...with a lot of things in life, that is certainly true, if fresh Sea Bass is a rare commodity where you are such as it is here, check out this Canadian company for your special ordering needs, I have yet to find something I haven't completely loved : )
